8 Corn or wheat tortillas

175g Feta or white cheshire cheese
175g Mozzarella cheese
6 tbsp grated Parmesan cheese
6 Spring onions, chopped
2 Garlic cloves, crushed
1 tbsp Sweet chilli sauce

1 tbsp chopped/torn Fresh coriander
1 cooked Potato, grated
1 egg, beaten

Serves 4

1. Grate the cheese and mix in the parmesan, spring onions, garlic, sweet chilli sauce, coriander, potato and seasoning.

2. Place 1 1/2 tbsp of filling into one half of the tortilla. Brush edges with egg and fold tortilla in half.
3. Place tortilla on lightly greased baking sheet and brush top of tortilla with some egg. Place in a preheated oven at 190oC/375oF/Gas mark 5 for 15 mins or until lightly browned.
4. Serve with side salad.
