300g Plain flour

1tsp Salt
60g Vegetable fat/Butter
150-175ml warm water

1. Sift flour and salt into bowl. Rub the fat/butter into flour with fingertips until it resembles fine breadcrumbs.
2. Add enough water to mix to a soft pliable dough. Nead on a lightly floured surface for a few minutes until smooth. Place in a plastic bag and leave for 15 mins.
3. Divide into 10 pieces and roll them out on a lightly floured surface to about 8 inches.

4. Heat thefrying pan until just before it smokes and then place the tortilla in the pan. Cook for about 20-30 seconds on each side. Do not grease the pan at all.
